Flaky vegan biscuits
Who loves flaky biscuits?? I have not made biscuits since going vegan, but I thought I’d give it a try and my old recipe was SO easy to veganize. Honestly these vegan biscuits are just as flaky and delicious as any you’ve tried. Plus they come together in minutes. This was a yummy treat breakfast for our family this morning. Perfect with jam!

Ingredients
- 2 cups all purpose flour you can also use 50./50 white/whole wheat
- 1 cup non-dairy milk
- 1 tbsp lemon juice or apple cider vinegar
- 1 tbsp sugar (optional) white sugar will work best here
- 1/2 tsp salt
- 1/4 cup vegan butter earth balance works well
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1 tbsp sugar (optional) for the tops of the biscuits

Instructions
- Preheat oven to 450F (yes, that hot!)
- Add vinegar or lemon juice to non-dairy milk and set aside to sour
- Mix dry ingredients well using a fork or a whisk
- Mix in vegan butter to dry ingredients, using your hands or two knives. Mix until there are no big pieces of butter left, but don't overmix.
- Add your wet ingredients to dry, and mix using a wooden spoon until just combined. Place on a floured board or counter and knead very very lightly 4 times.
- Pat flat into a rectangle and slice into 9 biscuits. Sprinkle the top with sugar if using
- Transfer to a baking sheet lined with baking paper or lightly greased. Keep the biscuits touching each other so they will rise up light and flaky.
- Bake for 12 mins. Enjoy hot!!
