Hummus soup!
If you like hummus you will love my Hummus Soup! It is creamy and garlicky, and packed with yummy chickpeas, everyone’s favourite pulse. If you are looking for a filling, easy soup which is packed with protein, fibre and healthy fats – this is the one. Bonus: ready in 20 mins!

Ingredients
- 1/2 onion chopped
- 1 or 2 cloves garlic how much do you love garlic?
- 1 carrot rough chopped
- 2.5 cups veggie stock
- 1 can chick peas
- 3 tbsp tahini
- 2 handfuls spinach
- 2 tsp lemon juice or more to taste
- salt and pepper to taste

Instructions
- Simmer the chopped onion, garlic, carrot, spices and 1/2 can of chick peas in veggie stock for 10 mins
- Stir in tahini. Blend using blender or hand bender until smooth
- Add the other half can of chick peas and the spinach. Stir til warmed through.
- Serve with crusty bread or pita. Top with pine nuts, spicy oil, sriracha, olives, paprika or roasted chickpeas

This is the PERFECT healthy meal to throw together when you only have 20 mins and store cupboard ingredients. Plus, it is SO delicious.
