Instructions
  1. Simmer the chopped onion, garlic, carrot, spices and 1/2 can of chick peas in veggie stock for 10 mins
  2. Stir in tahini. Blend using blender or hand bender until smooth
  3. Add the other half can of chick peas and the spinach. Stir til warmed through.
  4. Serve with crusty bread or pita. Top with pine nuts, spicy oil, sriracha, olives, paprika or roasted chickpeas

This is the PERFECT healthy meal to throw together when you only have 20 mins and store cupboard ingredients. Plus, it is SO delicious.
