Vegan Nacho Cheese Recipe
This nacho cheese is velvety, pourable, scoopable, tangy and spicy.

Ingredients
- 1 potato or sweet potato chopped (peel if desired)
- 1 carrot chopped
- 2 cloves garlic
- 1 small onion rough chopped
- 3 cups veggie stock
- 1/2 tsp garlic powder
- 1/2 tsp mustard
- 1 tsp apple cider vinegar
- 1/4 cup nutritional yeast
- 10 drops hot sauce add more if desired
- 1/4 cup raw sunflower seeds

Instructions
- Put the potato, sunflower seeds, onion, garlic and carrot in a pot. Add the veggie stock, bring to a boil and then turn to a simmer for 12 mins until the potatoes are very tender
- Transfer the liquid and the veggies to a blender. Add garlic powder, apple cider vinegar, nutritional yeast, hot sauce and mustard. Blend on high for 1 minute
- Taste. Add more spice and salt if desired!
