Sweet and Sour Tofu Eggplant
This Sweet and Sour Tofu Eggplant is a delicious and nutritious “fakeaway”! I’ve made is reallllllly easy so you can enjoy this meal from start to finish in about 20 mins flat.
If you are not sure about eggplant, this is a great recipe to start with. The sauce is delicious makes everything a treat. You’ll be eating the sauce with a spoon from the pan. It’s even family friendly!

Ingredients
- 1 medium eggplant any type works
- 1/2 block extra firm tofu
- 1 red bell pepper
- 1/4 cup water
- 3 tbsp soy sauce or tamari
- 2 tbsp brown or coconut sugar
- 2 tbsp rice vinegar
- 2 cloves garlic minced
- 1/2 onion minced
- 2 tsp cornstarch
- 2 tbsp vegetable oil
- 1 tbsp sesame oil
- 1/4 tsp hot pepper flakes optional
- 1 tbsp sesame seeds
- Salt and pepper to taste
- 2 cups cooked rice white or brown

Instructions
- Prepare rice according to package directions
- Chop eggplant and tofu into cubes, pepper into strips
- Whisk water, soy sauce, brown sugar, vinegar and cornstarch in a bowl until well combined with no lumps of cornstarch
- Heat vegetable oil to over medium heat and fry garlic and onion until translucent
- Add tofu to pan and fry until lightly browned. Remove tofu from the pan and set aside in a bowl
- Add eggplant and peppers and to the pan and fry lightly for 1 minute, stirring frequently
- Pour sauce over and simmer over medium heat for 8 minutes until eggplant is cooked through and sauce is thickened. Add hot pepper flakes if using.
- Stir in tofu.
- Serve over rice with a drizzle of sesame oil and sprinkle of sesame seeds
Recipe Notes
This would also work well with mushrooms in place of the eggplant
