Banana Chocolate Chip Snacking Cake (vegan)
This Banana Chocolate Chip Snacking Cake is super easy to make with ingredients you’ll have on hand. It has a rich banana flavour and the chocolate chips make it even more fun.
I baked this cake with my son Bly and my daughter Fern. I love to make them homemade treats on the weekend. I use them in school lunches and for after school snacks.

Ingredients
- 3 large ripe bananas
- 3 cups all purpose flour 375g, can use 50/50 white and whole wheat
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup applesauce
- 1/4 cup oil
- 1/2 cup white sugar 100 g
- 1/2 cup brown sugar 100g
- 3 flax eggs
- 2 teaspoons vanilla extract
- 1 cups and 1/2 plant-based milk 360ml
- 1 tsbp vinegar
- 1/4 cup vegan chocolate chips lots of baking chocolate chips are vegan!

Instructions
- Preheat the oven to 350°F (177°C) and grease a 9x13 inch pan or large springform pan.
- Mash the bananas
- Whisk the flour, baking powder, baking soda, cinnamon, and salt together in a large bowl
- Using a mixer or a whisk, beat the sugars, applesauce and oils together for about 1 minute until creamy. Add the flax eggs and the vanilla, then beat in the mashed bananas.
- Mix the dry ingredients together with the wet. Do not overmix. Stir in the chocolate chips
- Pour into your prepared pan and bake for 45 mins.
