Ingredients

medium eggplant
any type works
1/2
block extra firm tofu
1
red bell pepper
1/4

soy sauce
or tamari

brown or coconut sugar

tbsp
rice vinegar

cloves
garlic
minced

onion
minced

cornstarch

vegetable oil

sesame oil

hot pepper flakes

sesame seeds
Salt and pepper to taste

cooked rice
white or brown
Instructions
Prepare rice according to package directions
Chop eggplant and tofu into cubes, pepper into strips
Whisk water, soy sauce, brown sugar, vinegar and cornstarch in a bowl until well combined with no lumps of cornstarch
Heat vegetable oil to over medium heat and fry garlic and onion until translucent
Add tofu to pan and fry until lightly browned. Remove tofu from the pan and set aside in a bowl
Add eggplant and peppers and to the pan and fry lightly for 1 minute, stirring frequently
Pour sauce over and simmer over medium heat for 8 minutes until eggplant is cooked through and sauce is thickened. Add hot pepper flakes if using.
Stir in tofu.
Serve over rice with a drizzle of sesame oil and sprinkle of sesame seeds

This would also work well with mushrooms in place of the eggplant
