Vegan “meatballs”

Ingredients
- 1/4 cup dry cous cous
- 1 can chickpeas 540 ml or 19 fluid oz
- 1/2 onion
- 2 cloves garlic
- 6 tbsp mild or medium salsa (just how spicy do you like it?)
- 3 tbsp tomato paste
- 1/2 tsp liquid smoke (or smoked paprika)
- 2 tbsp dried italian spice blend
- 1/2 tsp hot sauce
- 1/2 cup all purpose flour
- 1/4 cup breadcrumbs
- 1/2 tsp salt
- 1/4 tsp black pepper

Instructions
- Prepare cous cous according to package instructions.
- Mix onions, garlic, salsa, chickpeas (drained), tomato paste, salt, spices, hot sauce and liquid smoke in food processor. Pulse until just blended and mixture remains chunky (not a paste)
- Scrape into a bowl and mix in all remaining ingredients. Store in the fridge for 30 min while you preheat oven to 375 F
- Shape mixture into golf-ball sized veggie balls. Bake on parchment paper-lined for 30 mins, flipping halfway through the cooking time.
Recipe Notes
Balls will be crispy on the outside and soft and chewy on the inside. So delicious!!
