Vegan “meatballs”

Vegan "meatballs"
A rich and flavourful (EASY) vegan "meatball" with Italian spices.

  1. Prepare cous cous according to package instructions.
  2. Mix onions, garlic, salsa, chickpeas (drained), tomato paste, salt, spices, hot sauce and liquid smoke in food processor. Pulse until just blended and mixture remains chunky (not a paste)
  3. Scrape into a bowl and mix in all remaining ingredients. Store in the fridge for 30 min while you preheat oven to 375 F
  4. Shape mixture into golf-ball sized veggie balls. Bake on parchment paper-lined for 30 mins, flipping halfway through the cooking time.
Recipe Notes

Balls will be crispy on the outside and soft and chewy on the inside. So delicious!!
