Vegan banana bread

  1. Preheat oven to 350F
  2. Mix flax eggs and set aside to gel
  3. Mix dry ingredients together in a large bowl
  4. Mix wet ingredients, including mashed banana (can use your blender for this task, saves on mashing the bananas)
  5. Add wet ingredients to dry and stir til just blended
  6. Pour batter into a greased 9X5 inch loaf pan. Bake for 50 mins. Poke with a knife or cake tester, it should come out clean.

If you don’t have aquafaba for the flax eggs, you can sub with water

Add in 1/4 cup walnuts or pecans or chocolate chips for extra yumminess
