Lemon Poppy Seed Pancakes – vegan!
Love lemon poppy seed loaf? Try my lemon poppy seed pancakes! They are delicious, ready in 15 mins and sooooooo easy. Of course they are vegan. Plus, did you know that poppy seeds pack an impressive nutrient punch? They are great sources of protein, healthy fats and calcium, iron and zinc. Don't give chia seeds all the attention!

- 1 cup flour I use 50/50 whole wheat and white
- 1 tsbp baking powder
- 1 tbsp sugar can use any type of sugar
- 1 tbsp poppy seeds
- 1/2 tsp salt
- 1/4 cup lemon juice (or juice and grated zest of one lemon)
- 3/4 cup plant based milk
- 1 tbsp vegetable oil

Instructions
Mix wet ingredients together and leave on counter to sour the milk. Mix dry ingredients well. Add wet ingredients to dry and mix til just blended. Heat skillet (I use an electric frying pan, but any pan will do) and grease lightly. I use non-stick cooking spray. Ladle batter onto a hot skillet and cook for about 3 min per side. You will know the pancakes are ready when bubbles form on top. Serve with all the toppings you love! We used blueberries, orange slices and coconut whip. Delsih.Share this Recipe
