Vegan date squares

These date squares are delicious and the texture is incredible. The gooey date filling contrasts with the crunchy crumble topping in a fun and satisfying way. Plus, these are easy to make.

  1. Preheat oven to 350 F. Add the dry ingredients together in a bowl, mixing well. Stir in the melted vegan butter until crumbly. Those bits are like mini oatmeal cookies!
  2. Place half your crumble mixture at the bottom of a 9 inch square pan. Bake for 15 mins while preparing the dates.
  3. Place the pitted dates, the water and lemon juice together in a pot. Bring to a boil then reduce to a simmer. Simmer for 5-10 mins, until desired date tenderness is reached.
  4. Pour the dates and the hot water into a blender and blend at high speed for one minute.
  5. Remove pan from the oven and spread the date paste over the bottom crumble layer. Top the date layer with the remaining crumble top. Return to the oven for 15 more minutes of baking.
  6. Allow to cool completely before cutting and eating if you want nice clean edges to your slices. Otherwise - just dig in! These are delicious.
