Vegan banana bread
This banana bread is so rich with a tender crumb. It is PACKED with banana flavour and preeeeety healthy too. Plus you can add yummy ingredients like pecans or chocolate chips to make it extra fancy.

Ingredients
- 2 cups flour I use 50/50 whole wheat and white
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 4-5 mashed overipe bananas
- 2 flax eggs 1 tsbp ground flax and 3 tbsp aquafaba for each egg
- 3/4 cup brown or coconut sugar
- 1/4 cup applesauce
- 1/4 cup vegan butter or coconut oil
- 1 tsp vanilla extract
- 1 tsp cinnamon

Instructions
- Preheat oven to 350F
- Mix flax eggs and set aside to gel
- Mix dry ingredients together in a large bowl
- Mix wet ingredients, including mashed banana (can use your blender for this task, saves on mashing the bananas)
- Add wet ingredients to dry and stir til just blended
- Pour batter into a greased 9X5 inch loaf pan. Bake for 50 mins. Poke with a knife or cake tester, it should come out clean.
Recipe Notes
If you don't have aquafaba for the flax eggs, you can sub with water
Add in 1/4 cup walnuts or pecans or chocolate chips for extra yumminess
