Vegan apple cinnamon pancakes

These pancakes are naturally sweet and full of apple cinnamon flavour. They are ready in 20 mins, and are surprisingly light, soft, fully and tender. You can feel great about all the fibre, and no added sugars! Perfect weekend food.

  1. Add dry ingredients together in a large , and mix well
  2. Add vinegar to plant-based milk. Let sour for 5 mins. Then add applesauce.
  3. Add wet ingredients to dry and mix until just combined.
  4. Cook on a hot pan. I grease mine lightly with cooking spray. Use a ladle to pour out the batter. Pancakes are ready to flip when bubbles form on top. 2-3 mins per side.
  5. Serve with berries, coconut cream, nuts, seeds, syrup, jam, fruit compote, nut butter or powdered sugar. Yum!!
