Ingredients
- 1 tbsp olive oil
- 1 onion
- 2 cloves garlic
- 2-3 cups shredded or chopped red cabbage
- 4 cups veggie broth
- 1 large can chopped tomates
- 1/2 cup yellow spit peas
- 1 carrot
- 1/2 tsp smoked paprika
- 1 tbsp dried parley
- 2 cups chopped/shredded kale I use my kitchen scissors
- 1 tbsp lemon juice
- 1 tbsp apple cider vinegar
- 1 tbsp agave
- 1-2 tsp hot sauce plus more if ya feel lucky, punk
- salt and pepper to taste

Instructions
- Warm olive oil over medium heat. Add chopped onion, garlic and carrot, and stir frequently until onion and garlic are soft.
- Add veggie broth, cabbage, dried parsley, smoked paprika, can chopped tomatoes and split peas. Cover and simmer for 50 mins, or until split peas are tender
- Add lemon juice, apple cider vinegar, hot sauce, agave and kale. Simmer, uncovered, for an additional 10 mins. Taste and add salt, pepper and additional hot sauce as desired. (I know you like it spicy!!)
Recipe Notes
To boost the overall deliciousness and protein content of this soup, you can add one chopped veggie sausage with the kale.
Serve an with optional garnish of pumpkin seeds. These zinc-filled powerhouses are good on just about anything.
