Smokin’ Sweet Potato Black Bean Burgers
These Smokin’ Sweet Potato Black Bean Burgers are incredible!!! Smoky and sweet and a little bit spicy. They are packed with healthy, whole foods ingredients and have a great texture too. They won’t fall apart! I pinky swear. And of course they are vegan.

Ingredients
- 2 cups baked sweet potato mashed
- 1 can black beans 540 ml or 19 fl oz
- 1 cup leftover rice or quinoa can use brown or white rice or quinoa. Leftover is best!
- 1/4 cup pecans or walnuts can use any seed or nut, finely chopped
- 1/4 onion minced
- 2 cloves garlic minced
- 1/3 cup quick oats
- 1 tbsp ground flax
- 1 tbsp aquafaba
- 1 tsp paprika
- 1/2 tsp chili powder
- 1/4 tsp liquid smoke
- 1 tbsp brown sugar optional
- salt and pepper to taste

Instructions
- Preheat oven to 400F
- Mix all ingredients together in a bowl, and using a potato masher, mash for 2 mins (you can also do this in a food processor, using the pulse function). Mix again and to sit for 10 min to firm up the texture.
- Shape into patties with your hands. If burgers seem dry, add an extra tbsp of aquafaba. If burgers seem too wet add an extra tbsp of ground flax. Place on a baking tray, lined with baking paper.
- Bake on the centre rack for 35 mins, flipping carefully after 20 mins.
- Dress with all your favourite toppings Ketchup, mustard, tomato, lettuce, onion, vegan mayo, avocado, BBQ sauce..... you're the doctor

Note: you will need leftover rice or quinoa for this recipe! You can use freshly cooked, but your burgers won't hold together as well.
