Pesto
This is a gorgeous pesto with a fresh lemon flavour. You can use any greens and any nuts you like. I love getting a fresh basil plant and tearing off the leaves so the basil will taste rich and full-bodied. If I don't have quite enough basil, I will add in some baby spinach or baby kale. Walnuts also make a beautiful pesto. Please, don't forget the nutritional yeast!!! Gives it that cheesy taste we love.
Instructions
- Toast pinenuts. Add basil, garlic, pine nuts, nutritional yeast, lemon and spinach into a food processor
- Add olive oil depending on the consistency you want. Add salt to taste.

Serve on top of pasta or as a spread on sandwiches.
