This recipe is simple, tasty and secretly full of veggies! My kids adore this and it really does taste creamy and cheesy like mac and cheese!

Vegan Mac and Cheese
Instructions
  1. Boil sweet potatoes, sunflower seeds, carrots and onion in enough water to cover the veg for about 10 minutes until they are soft. Cook pasta in a different pot
  2. Blend sweet potato, raw sunflower seeds, carrot, onion and garlic on high with boiling water
  3. Add salt, mustard, apple cider vinegar and nutrition yeast. Blend again. Add salt and pepper to taste
  4. Pour sauce over cooked pasta
Recipe Notes

Add a little hot sauce for a touch of spice! You can sub veggie stock for the water for even more flavour, but you might need to cut back the added salt This sauce can also be used as a topper for nachos.
